This raspberry-topped, fudgy chocolate cake is arguably The Great British Bake Off’s most iconic bake – first made eleven years ago, and the enduring star of the programme’s title sequence. Aspirational but achievable and (of course) decadently delicious, it is, quite literally, Bake Off in a Box.

Mini Loaves

Individual banana loaves are perfect for a morning or teatime gathering, or even a child’s birthday party. Topped with buttercream and decorated with slices of dried banana, this recipe elevates a sweet snack to a delightful treat. You could, though, leave out the buttercream and decoration, if you wish, in which case the loaves are perfect for a lunch box or picnic.

A traybake is the simplest way to feed a crowd, so whether you’re baking for a charity cake sale or an office birthday, these very lemony lemon slices are a quick and-easy win. Make sure your sponge is still warm when you add the drizzle – a warm sponge is better at absorbing the syrup than a cool one, helping to make sure that your sponge is moist all the way through.

Babka

Who watched Paul’s technical Babka challenge on GBBO series 11? Now it’s time to dough it yourself. A babka is a traditional Jewish filled, cake-y bread (like a brioche), originating from Eastern Europe. This babka is filled with fudgy chocolate and crunchy hazelnut, which make for a rich and perfectly textured treat that’s just the thing with a cup of coffee

Bakewell Tart

In this classic Bakewell recipe, fluffy frangipane covers a layer of homemade raspberry jam and is encased in crisp, sweet pastry. We love the feathered icing technique used for decoration. Simple to master, it's an iconic topping for a Bakewell.

Passion fruit éclairs

with Meringue Kisses

Choux buns filled with a passion fruit-flavoured crème pâtissière and topped with caramel and delicate meringue kisses – these éclairs could be straight out of a Parisian pâtissérie. They are a wonderful introduction to choux pastry, which is much easier than it seems. The lightness is the result of steam that generates inside the buns as they bake.
